The first one is using a petrochemical process to evacuate absolute alcohol.
The second one is fermenting sugars using yeasts.
The second process has three steps.

The first step is to ferment sugar by yeast using the petrochemical process
Distillation
The distillation process is used to separate ethanol and water. While the ethanol’s boiling point will be 78 degrees Celsius, water’s boiling point will be 100 degrees Celsius. The mixture is heated till it reaches 78 degrees Celsius. Once the alcohol reaches this level, it starts boiling.
Upward and Downward Motion
In this step, the ethanol will start traveling upward and then toward a cooling column filled with cold water. The ethanol vapors would condense back to liquid form. Ethanol is then collected in its pure form (i.e., absolute alcohol).
